Tove Merrin cooks every plate at the counter, a metre from where you sit. There is one sitting a night and one menu, so the kitchen can cook each course at the moment it is ready to eat.

Doors
Take your seat at the counter. Snacks and a glass of something cold while the kitchen sets the pass.

First course
All twelve plates of the first course are fired together, so the whole counter eats at once.

Dessert
The pastry section takes over the pass. Sorbet is shaped with a hot spoon as each plate goes out.

Last pour
Coffee, a small sweet and the menu to take home, signed by whoever cooked your fish.
